Abstract

lndustrially obrained human albumin and IgG pastes, were freeze-dried. The adsorption isotherms of both freeze­dried products, were then studied. Among seven mathematical models previously studied for food water adsorption, only Oswin, Hasley and Khun models were adapted for albumin on the entire range of aw. Harkins-Jura model was well fitted for IgG experi­mental points. In both cases, the rest of the models generally ex­plain the adsorption behaviour for the low aw range. BET model was onJy adapted for aw S 0,58, while GAB model explains all the aw range studied. The monolayer water content was similar for borh freeze-dried proteins.
