Abstract

The different substances now identified as components of sugar cane can be initially separated into groups of according to the chemical nature of each of them. It is so in the crude cachaça wax oil from sugar cane, which comes mainly from the "buds" of the reeds, have been found the following substances: triglycerides (esters of glycerol with fatty acids), waxes (esters of alcohols higher aliphatic and acidic long chain fatty acids) free fats —as possible products from the hydrolysis of triglycerides erids like waxes—, antioxidants natural (carotenoids, flavonoids), etc.
