Abstract

Many papers have been written about fluorescence, fluorescent compounds and fluorime­tric analysis related to different types of organic com­pounds, but only a few reports refer to these aspects in the sugar field. The present work is a review of fluo­rescent derivatives and fluorimetric analysis in .;ugars, and in commercial products of sugar industry. Reasearch about the formation of fluorescent com­pounds from sugars in different reaction conditions is included.
