Abstract

This paper gives the identification of sweet orange aroma components in the aqueous condensate obtained from juice concentra­tion. The isolation of these compounds from the aroma extract obtained by extraction with diethyl ether was made by the conventional chemi­cal methods to isolate sistematically the a, B -unsaturated aldehydes, aliphatic aldehydes and methyl ketoncs, alcohol and esters. The identi­fication was made by comparison of relative retention data by gas chromatography and thin !ayer chromatography, and by infrared and mass spectrometry.
