Abstract

A propasal is made to establich the maximum limits of nitrate residues in vegetable products, based on the levels found on an experimental basis, the losses due to coction and the availability per capita of the population, adjusted to the delivety and storage. With the establishment fo such limits it can achieve to avoid exceeding the ad­misible daily intake recommended by the Joint Committee FAO/OMS with the consequent preventive sanitaty and toxicological advantages.
