PRESENCIA DE MICOTOXINAS EN CEREALES PARA CONSUMO HUMANO

Abstract

The possible occurrence ot aflatoxins B and G, ochratoxin A, citrínin and zearalenone was evaluated in 192 samples of cereals (rice, corn, wheat and oat). Mycotoxins levels were estimated by visual inspection of silica gel chromatog, ams under UV light. lt was found that 2,70 % of rice samples were contaminated with aflatoxin B (32 µ g/kg) and 11,28 % of cr:>rn derivatives samples contained ochra­toxin A (10 to 32 µg/kg) and zearalenone (200
µg/kg); being ochratoxin A was the mycotoxin most trequently tound in the analized samples. Corn was the most contaminated cereal, as is commonly
reportad in literatura. Contamination is likely to occur in the food raw materials or during an inade­quated storage befare distribution of foods. A better sanitary control of cereal foods seems to be ne­cessary.
