Abstract

The bee pollen is a food with nutritional and therapeutic properties for the man, in Cuba could be an economic,
but and it is not possible because it exceeds the microbiological specifications for this product. With the aim to
use lactic acid bacteria for silage bee pollen and get a product with acceptable microbiological quality, were tested seven
strains of Lactobacillus autochthonous of the bee bread and belonging to the species L. plantarum, L. coryniformis and
L. delbrueckii and three industrials, L. plantarum, L. casei and L. acidophilus. It was evaluated the production of acid
and the capacity to inhibit the viability of Escherichia coli ATCC 25922 strain. The most promising were inoculated in
silos of pollen designed to 24, 29, 36 and 40 % humidity, to the 15 d were analyzed variables acidity, total coliforms, yeasts
and fungi according to the NC-ISO standards. The results were processed statistically through a double ANOVA. The
industrial bacteria and autochthonous, 42-L. plantarum and 32-L delbrueckii were the most promising, with results above
1 % lactic acid and total inhibition of E. coli. The inoculation of these strains in silos suggested that the autochthonous,
36 - 40 % humidity, produce more acid, about 2 % lactic acid, and reduction to the acceptance of microbiological indicators.
The silage pollen with lactic acid bacteria autochthonous of the bee bread permits to get acid product with acceptable
microbiological quality.
