Abstract

Different methods for to cuantily poly­phenols in vegetable food and their effects on ani­mal metabolism are analized. The concentration of polyphenols in leguminous and cereal seeds is smal­ler thah 1 %, localizating them in the rind mostly. lt exists an inverse relation between contain of poly­phenols in the food and protein digestlbllity. Like­wise, polyphenols can reduce biodisponibility of amino acids, the growth and food ingestion in the animals. Diets with more than 0,5 % of polyphenols may alter appreciably metabolism of certain nutrients.
